About us

Atelier Kalina at Pachtuv palace follows in the steps of the Kalina cuisine & vins restaurant.

We focus on finding the best ingredients on the market to make the best dishes which are then combined with traditional wines, but this time our chef Mirek Kalina, juror from the Masterchef show, in cooperation with talented Petr Hajný prepares what he himself calls- Modern Czech cuisine.

The interior is simple and functional, with the main focus on a large glass window to the kitchen, where you can see our team hard at work. Our stunning outside terrace at the courtyard- perfectly hidden from the noise of the streets has a relaxing seating welcoming you to enjoy it.

Cuisine

THE REAL CULINARY EXPERIENCE
Our recipes are focused on traditional Czech cuisine, as we remember it from our mothers and grandmothers but with a modern approach.

Along with the main menu you can always find a quick, tasty and healthy lunch and in the evening the daily specials and fresh fish.

At Café La Crème located right next door you can enjoy the best breakfast in town, or through the day, simple bistro style cuisine.

During sunny spring and summer days, our guests appreciate our quiet oasis – the terrace in our first courtyard, from where they can enjoy the beauty of the baroque palace surrounding it.

For private dining or meetings, you can use our private lounges and for cigar lovers, we offer our own cigar club.

At the Atelier, we hold in great importance, the cooperation between the chefs and our sommeliers, and this can be seen on the wine list, with a large selection of gastronomical wines from the Czech Republic, France and many other countries.

We serve our wine exclusively in Riedel glasses.


 

Vít Hepnar

Vít Hepnar began his career in the French restaurant of the Municipal house in Prague. As a sommelier, he fully established himself in one of the most popular restaurants in Prague in the 1990s, Rybí trh. Consequently, he became the co-founder of the gourmet restaurant, Le Terroir. He has won many awards in sommelier contests during his career. He considers the Trophée Ruinart and the Burgundy Grape to be his top accomplishments. Vít Hepnar is a member of the Wine& Degustation monthly committee, to which he also regularly contributes. He is also a partner of Gourmet Services, s.r.o., an importer of selected French wine and supplier of exclusive buffets.

Mirek Kalina

Mirek Kalina worked as head chef and various positions in leading Czech restaurants such as Bazar, Aqua, Kampapark, Šípek Bistrot, ADA and the Hoffmeister hotel restaurant in Prague. He has taken part in a number of international apprenticeships, including three Michelin star restaurants -   ORO in Norway, Krone (*) in Germany (*)  and primarily in the legendary three-star Les Prés d‘Eugenie with famous head chef, and one of the founders of nouvelle cuisine (new French cuisine), Michel Guerard.

Petr Hajný
